Recipe No.3 Roast Pepper Tofu Burgers Ingredients 1 Red Pepper - (2oz/56g) Tofu,grated - 6oz (170g) Plain Flour - 3oz (75g) Margarine- 2 Tablespoons Water - Tablespoon Sugar Coating Ingredients Flour - Beaten Egg - Sesame Seeds or Polenta Dressing Ingredients 5oz (150g) Organic Yoghurt - 1 Tablespoon Chopped Mint - 1 inch (25mm) Cucumber, grated - Salt &Pepper Method Halve the pepper and place under a hot grill until skin blisters. Cool slightly under cold water, remove the skin then chop finely. Mix all the burger ingredients together, then divide mixture into four. Shape each portion into a burger approx.3inch (75mm) in diameter and chill. Lightly dust each burger with flour, then brush with beaten egg. Coat with sesame seeds or polenta, shaking off any excess. Mix all the dressing ingredients together. Fry the burgers in a little oil for 10-15 minutes turning frequently until light golden colour. Drain on kitchen paper towel. Serve burgers with the dressing. | ||
